May 31, 2004: Cheese Night!

My lactose intolerance is well-known. Most of my life has been bereft of ice cream, pizza, and chocolate. Except for a miraculous three year stretch between years 12 and 15, even the smallest speck of milk product has induced gastric hysterics- imagine getting repeatedly kicked in the stomach, fifteen or twenty times. About five or ten years ago, some science geniuses invented Lactaid Ultra- it's a pill that contains 9000 FCC units of lactase, which is the enzyme that I lack. If I take two or three pills, I can have a slice of pizza or cup of coffee with milk, and if I take four, I can indulge in something I call cheese night. Basically we go to Murray's Cheese Shop on Bleecker, and get the guys behind the counter to select eight of their most potent cheeses. Throw in a little quince paste, some sausage, and a good red wine, and then return to the apartment for a cheese orgy. It's paradise- and worth the terrible pain that I'll no doubt be experiencing in fifteen or twenty minutes.

Pont L'Eveque is nassss-ty. Smells and tastes like bleach or antifreeze or something else equally disgusting. That Gouda looks good tho.
I developed lactose intolerance about three years ago after a superbly nastly flu. Rare but it happens. So my tip for you, jake, is Costco -- their generic lactase tabs (also 9000) are something like 1/2 the price of the brand name variety at 9 cents a pill.

There's something about cheese close-ups that is just unsettling. Why does it look sweaty?
