Not sure on a Mac, but on the PC version of CS3, press F to toggle between viewing modes. I like the mode right after the standard windows mode when it maximizes the current document bounds and only shows the current document so you can zoom in and out, and the document bounds stay inside of the palettes.
Just the fact that the right side palettes are more linked together is awesome and that a document will not open up underneath the left palette is smart.
Camera RAW has some small improvements and you can now use the RAW dialog for JPG (I prefer to edit photos initially through Camera RAW). You can make JPG files open up in RAW by setting it up in the preferences.
Bridge is improved. There is a black and white adjustment layer (but I still prefer converting via channel mixer usually).
The quick selection tool is very good for making masks.
Also, a cool tip I came across that helps in seeing the new stuff is in CS3, click WINDOW > WORKSPACE > "Whats New In CS3". Apply the workspace and new stuff to CS3 will be highlighted.
